Mexican Lettuce Wraps

(You will need: romaine lettuce, 1 package chicken breast cutlets, olive oil, green/yellow/red/orange peppers, 3/4 red onion, 1 package simply organic southwest taco seasoning, 1 can black beans)

1) Use w cooking scissor to cut the raw chicken cutlets into very tiny pulled pieces

2) Slice the peppers into long slivered pieces 

3) Chop up onion also into long pieces 

4) Preferably using a cast iron skillet, heat oil on medium-high heat. When oil is hot add in onion

5) Cook for 6-8 minutes and then add in sliced peppers 

6) Add in 1/4 of simply organic taco seasoning and stir onion & peppers altogether for another 6-8 minutes

7) Add in pulled chicken to the skillet and the rest of the taco seasoning- let cook for 15-18 minutes stirring semi frequently 

8) Drain black beans & in a medium non stick pan heat 1 teaspoon of olive oil 

9) Add beans in and cook about 5-8 minutes or until heated- stir occasionally 

10) Wash lettuce wraps and plate- then add in chicken, pepper & onions carefully to create taco 

11) Put black beans on bowl or plate and enjoy your healthy Mexican meal!
