Healthy Alibi


Mushroom Bruschetta

(You will need: 2-3 tomatoes, 7-8 basil leaves, white balsamic vinaigrette, extra virgin olive oil, salt, pepper and 1 package mini portobello mushrooms)

1) Preheat oven to 425 degrees
2) Wipe mushrooms with wet paper towel to clean and use small knife to cut a hole around each stem so each mushroom is hollow in the middle
3) Prepare a baking tray with tinfoil and spray the bottom with olive oil. Place the mushrooms face up on the tray (head is on bottom)
4) Bake mushrooms for 10-15 minutes or until they weep
5) While mushrooms are baking, dice the tomatoes into small squares
6) Wash and chiffonade the basil into small pieces
7) In medium bowl, combine the diced tomatoes, basil, 2 tablespoons of white balsamic vinaigrette, 1 tablespoon of olive oil, sprinkle of salt and pepper
8) Mix altogether until combined well
9) Take out mushrooms and make sure to drain each one of extraneous oil inside
10) Use a small spoon to fill each mushroom with the tomato mixture
11) Serve and enjoy!
