Chicken Tacos

INGREDIENTS:

3-4 chicken breasts

1 chopped tomato

1 can black beans

1 package yellow rice

1/2 cup chopped romaine

3 bell peppers sliced long

1 package taco seasoning (I love simply organic southwest taco seasoning)

Taco shells (I love Old El Paso stand n stuff hard shell corn tortillas)

1 tablespoon oil

DIRECTIONS:

  1. Boil 4 cups of water in large pot- once boiling add in chicken breasts. Cook for 30 minutes.

  2. Cook yellow rice according to package directions.

  3. When chicken is cooked take out of water and let cool for 10 minutes. Once cool, pull the chicken so that it appears “shredded” and can fit well in the taco shells.

  4. In a large sauté pan heat oil on medium-high heat. add in bell peppers and cook until soft. Then add in pulled chicken and taco seasoning stirring frequently.

  5. In small sauté pan heat up black beans- stir infrequently.

  6. Once chicken & pepper combo is well combined and the seasoning turns moist- it’s done.

  7. Put everything in it’s respected bowl or plate- take your taco shell and create the taco of your dreams! I like to add the chicken & peppers first, then beans, then lettuce & tomato. On the side give yourself some rice and more beans on top! Enjoy!! Xx
