Lemon Chicken

INGREDIENTS:

1 teaspoon oregano.

1/4 cup olive oil.

Sprinkle salt & pepper.

1/2 cup fresh lemon juice.

1 garlic clove.

1 teaspoon rosemary.

1 lemon chopped in wedges.

2-3lbs chicken breasts.

1/2 cup thyme.

DIRECTIONS:

  1. Preheat oven to 400 degrees.

  2. In medium bowl combine olive oil, salt, pepper, garlic, oregano.

  3. Prep a baking pan with tinfoil and spread the olive oil mixture evenly on the bottom of the pan.

  4. Lay each chicken breast on the pan, using a cooking brush take the olive oil mixture from the bottom of the pan and paint the top of the chicken breasts with it.

  5. After chicken is evenly coated on both sides, sprinkle lemon juice and rosemary on top. Then spread the lemon wedges on and in between each piece. Sprinkle thyme on top of it all.

  6. Bake chicken in oven for 35-40 minutes, take out and enjoy!
