Easy and Delicious Quinoa Salad  

INGREDIENTS:

1 cup cooked white quinoa 

1/2 can chickpeas 

1/4 cup chopped kale

1/4 diced red onion

1/4 cup sliced julienne carrots 

1 tablespoon red wine vinegar

1 teaspoon extra virgin olive oil 

pinch of salt & pepper

DIRECTIONS:

Add quinoa to a medium-large bowl and add in chickpeas, kale, onion & carrots

In a small separate bowl mix together red wine vinegar, olive oil, salt & pepper

Combine everything with spoon and serve hot or cold
