Veggie Kugel



You will need: 1 shredded zucchini, 1 shredded sweet potato, 1 cup rainbow carrots shredded, 1 diced yellow onion, garlic powder, onion powder, salt, pepper, olive oil, 4 eggs, 1 cup baby spinach, 1 tablespoon diced chives, 3 tablespoons almond or quinoa flour.

Directions:

  1. Preheat oven to 350 degrees. In large pan heat oil at medium-high heat. Add in onion and cook until translucent, then add in sweet potato, carrots, zucchini, garlic powder, onion powder, salt & pepper. 

  2. Sauté veggies for 10-15 minutes- you’re looking for them to soften, brown a bit and get rid of excess moisture. When they’re done cooking, transfer to a bowl and let cool.

  3. Once cooled, add in eggs, spinach, chives and flour. After everything is well combined transfer into a rectangular baking dish. 

  4. Bake the mixture uncovered for 40-45 minutes then allow to cool for 10 minutes before serving. Enjoy!
