Shredded Brussels Sprouts with Cranberries

INGREDIENTS:

~ 1 stem of Brussels sprouts with stems cut off, halved and shredded (cut into thin pieces)

~ 1 tablespoon olive oil 

~ 1 teaspoon honey 

~ 3/4 cup fresh cranberries 

~ 1 teaspoon Dijon mustard 

~ Salt and pepper 

~ 1/2 cup freshly squeezed orange juice

DIRECTIONS:

  1. Preheat oven to 425 degrees F.

  2. On a rimmed sheet pan place brussel sprouts - in separate bowl whisk altogether olive oil, salt and pepper, honey & mustard. Pour over Brussels sprouts and make sure evenly combined.

  3. Roast about 25-35 minutes or until golden brown

  4. Take out and add in cranberries, roast another 5-6 minutes making sure the cranberries do not burn (they will turn bitter).

  5. Remove from oven and pour orange juice over Brussels sprouts and cranberries. Toss to combine & serve hot!
