Gluten-Free & Kosher Chicken Marsala

INGREDIENTS:

~ 1/2 cup almond or quinoa flour 

~ 1 package thin sliced chicken breasts

~ 2/3 cup Marsala wine

~ 2/3 cup vegetable broth

~ 1 package small portobello mushrooms sliced 

~ 2/3 yellow onion diced 

~ 1 garlic clove 

~ 2 tablespoons dried or fresh parsley 

~ 1 tablespoon olive oil

~ sprinkle of salt & pepper

DIRECTIONS:

1️⃣ Cut each cutlet in half and coat in a mixture of flour, salt & pepper. Set aside.

2️⃣ Heat oil in a large skillet over medium-high heat and cook chicken. Transfer to plate and set aside.

3️⃣ Add more oil if necessary and cook onions & mushrooms. When cooked, add in garlic & pinch of salt. Add in broth & Marsala- bring liquid to a boil and let the mixture reduce {about 10 minutes}.

4️⃣ When mixture is thickened add chicken back in and let heat up on both sides {about 4-5 minutes}

5️⃣ Transfer to platter, add parsley on top and serve hot!
